Most supermarkets reduce bakery items in the afternoon and again in the evening, though timing varies by branch. Bread, rolls, pastries and cakes are typically marked down when they will not keep at full price until the following day. Visiting between mid-afternoon and early evening is usually the most productive window for bakery reductions.

What to buy and what to freeze

Most bread freezes well and can be toasted from frozen without losing quality. Sliced loaves and rolls work particularly well. Pastries and cakes have a shorter freezer life but still benefit from being frozen on the day of purchase rather than going stale. Buying reduced bakery items specifically to freeze turns a time-sensitive saving into a flexible one.

Getting the best value

The biggest discounts on bakery items tend to appear closest to the end of the selling day. A loaf reduced by 50 to 75 percent and frozen immediately represents genuinely strong value. Being flexible about which type of bread you pick up on a given day — rather than being committed to a specific product — means you can take advantage of whatever the best reduction happens to be.
